Shrimp Stir-fry
Shrimp stir-fry is a delicious and easy weeknight meal! Use up whatever veggies you have in the fridge or keep some frozen stir-fry veggies in the freezer for a last-minute meal idea!
Ingredients:
1 TBS oil
1.5 pounds shrimp
1/2 tsp salt
1/4 tsp red pepper flakes
1 TBS sesame oil
2 TBS coconut aminos
2 TBS rice vinegar
1 tsp fresh minced ginger
2 cloves garlic minced
Veggies of your choice, including matchstick carrots, broccoli, sliced bell peppers, onion, mushrooms, snow peas, bamboo shoots, and water chestnuts.
Instructions:
Heat 1 TBS oil in a pan over medium-high heat. Toss the shrimp in salt and red pepper flakes and then cook until light pink color (about 4 min) and set aside. Add in the sesame oil and all the veggies and cook about 8 minutes. Add the garlic, ginger, coconut aminos, and rice vinegar and cook 3 more minutes before adding back in the shrimp and cooking for an additional two minutes. Top with green onions and sesame seeds!
