Roasted Radishes

 

These radishes are the perfect low-carb and high fiber alternative to potatoes and are a perfect sidekick to any meal!

Ingredients:

400g radishes (approximately two bunches) rinsed, trimmed, and sliced.

1 TBS olive oil

2 teaspoons thyme

Salt and pepper to taste

28g. shredded parmesan cheese (optional, but delicious).

Instructions:

Preheat oven to 400 degrees. Line baking sheet with parchment paper. Toss radishes with oil, thyme, salt, and pepper and place in single layer on baking sheet and spritz with cooking spray. Roast for 45 minutes, flipping once halfway through. Remove from oven and sprinkle with parmesan cheese and roast an additional five minutes. Serves two.
