Marinara Sausage and Gnocchi
This lunch has been on repeat lately, because it’s filling, quick, and a great source of fiber.
1-2 chicken apple sausages, sliced
1 c (140g) Trader Joe’s cauliflower gnocchi
1/2 c (128g) basil marinara
1 cup spinach
Throw it all in a pan, cover, and let it simmer on medium until the gnocchi is smushy and delicious-lookin’.
