Single Serving Berry Cobbler
This Berry Crumble is a delicious treat that can be made in single servings so your fork doesn’t keep going back to the pan 😉 It's gluten free and egg free, could be dairy free if you swapped butter for ghee or coconut oil. Try limiting the coconut oil or butter to lower the fat, too!
1/8 cup coconut flour
1/4 cup almond flour
1-2 TBS butter or coconut oil
2 tsp maple syrup
1/4 tsp cinnamon
1/4 tsp vanilla
1 tsp chia seeds
1 tsp teff seeds
1/2 tsp salt
2 TBS slivered almonds
2 TBS oats
2/3 cup of fresh or frozen berries tossed in
1tsp of tapioca flour to create a thick sauce
Toss berries in tapioca flour. Place in ramekin. Mix the rest of the ingredients with a fork to blend into the butter or coconut oil. Top the berries with the oat crumble mixture. Bake at 350 degrees for 12-15 minutes until golden brown on top. Makes one serving.
