Sausage, potato, and kale soup
There is something so comforting about warm soup on a cold day! šµThis sausage, potato, and kale soup is the perfect meal to add to your familyās weekly rotation! šā£
ā£Ingredientsā£
* 8oz sweet or spicy ground Italian sausageā£
* 8oz extra-lean ground turkeyā£
* 1 tbsp olive oilā£
* 100g yellow onion, dicedā£
* 3 cloves of garlic, mincedā£
* 5 cups chicken stockā£
* 24oz gold potatoes, peeled and diced into small piecesā£
* 1 tsp basilā£
* 1 tsp thymeā£
* 1 tsp saltā£
* 1/2 tsp white pepperā£
* 170g to medium sized kale leaves (washes, stems removed, and torn into bite size pieces)ā£
* **Optional: red pepper flakes if you want a little kick! ā£
ā£Instructionsā£
1. In a large stock pot, add olive oil and a bit of cooking spray and heat on medium high. Combine the sausage/turkey and brown. Remove the sausage and set aside in a small bowl.ā£
2. Add diced onion to the pot and cook about 5 minutes or until onions are soft and tender. Add the basil, thyme, salt, and white pepper, toasting the spices for 1 minute. Add the garlic and cook for 1 minute more, making sure not to burn.ā£
3. Pour in the chicken stock and bring to a boil. Add the potatoes, and simmer on low for 25-30 minutes or until potatoes are fork tender. Add salt to taste. ā£
4. Add the kale and the cooked sausage and cook on medium-high heat for 3 to 5 minutes, or until everything is nice and hot and the kale has softened up.ā£
5. You can serve immediately or make ahead for the week!ā£
