Lemon Zucchini Muffins

2 cups flour

1/2 tsp salt

2 tsp baking powder

2 eggs

1/2 cup canola oil

1 1/3 cup sugar

2 tbsp lemon juice

1/2 cup buttermilk

1 lemon zest

1 cup grated zucchini

Instructions:

1. mix flour, salt, and baking powder - set aside

2. Beat eggs and then add oil and sugar until well blended.Add lemon juice, zest, buttermilk and blend together

3. add zucchini and mix well. 

4. Combine dry misture to wet mixture until well combined

5. Pour batter into greased muffin pan

6. Bake at 350 for 25 minutes

Optional glaze (not included in macro count) 

1/2 cup powdered sugar

1 tbsp lemon juice

1/2 tbsp milk

Have extra blueberries around ? Add a few to each cupcake for extra flavor.
