Greek Salad
For this Greek salad we started with some greens (you could do arugula or whatever is in season), added some cooked + chilled quinoa for carbs, cucumber, tomato, steamed asparagus for our veggies, we topped it with a little bit of feta cheese (you could do fat-free feta if you’re cutting back on your fat intake), and finished it with @coeurgreens pea shoot micro greens for extra nutrients! Add our homemade balsamic dressing to round it off. This salad would be perfect to have prepped in the fridge, add a turkey burger or grilled chicken to it, or even make a huge bowl to take to a BBQ.
