Chicken Noodle Soup
Feeling under the weather or need something warm and cozy after a day of playing in the snow? This chicken soup is quick, simple, and the whole family loves it.
Ingredients:
16oz. rotisserie chicken (Costco, of course)
3 carrots, diced (8oz)
4 celery stalks, diced (8oz)
1/2 sweet potato, diced (4oz)
1/2 onion, diced (3.5oz)
2oz spinach
1TBS olive oil
2 minced garlic cloves
24oz chicken stock or chicken bone broth (we prefer Bonafide Provisions chicken bone broth-found in natural foods markets or in the frozen section at Walmart).
Salt to taste
Instructions:
Heat large pot over medium-high heat. Add oil, garlic, and chopped veggies and sauté until softened, about five minutes. Add chicken, salt, and broth and bring to a boil. Cover and reduce heat and simmer for 15-20 minutes or until veggies are softened. Add spinach and simmer until wilted. Serves 4.
