Black Bean and Mango Salad
This black bean and mango salad is the perfect summertime side dish to serve with pork tenderloin, chicken, or tossed into a salad! It’s easy to make and can be used throughout the week to mix things up a bit!
Ingredients:
250g mango (fresh or frozen/thawed)
100g thinly sliced green onion
455g black beans (one can)
1 TBS extra virgin olive oil
2 TBS fresh lime juice
3 TBS chopped cilantro
3/4 tsp salt
1/4 tsp pepper
2 TBS roasted tomatillo salsa
45g dry wild rice or brown rice (we used @lundbergfarms organic wild rice)
Instructions:
Cook rice according to package instructions. Combine all ingredients in large bowl and serve. Serves six.
